Next time you buy a steak to grill, try substituting bison instead. The Hill Team has found it much easier to buy bison locally than when it first became popular, both in Florida and Arizona. We all like the rich and meaty flavor, as well as the texture and healthier benefits of bison. It is much lower in fat but not flavor.

While Maralyn and Norm prefer a deep red wine, such as Cabernet, with Bison, Brenda likes a cold hearty beer, such as Guinness.

Tip: Try Bison instead of beef for a more vibrant flavored stew, using Guinness as the stewing liquid. You can also purchase Bison online when not available locally. Bison burgers are delicious!
