‘The
Tandem
Tasters’
By now
our
readers
are well
aware of
how much
the
Tandem
Tasters
(Cheese
Queens)
love
cheese.
We call
cheese
our
non-guilty
pleasure,
because
of the
healthful
qualities
in many
cheeses.
Last
year we
must
have
tasted
almost
every
cheese
from
around
the
world at
Bocuse
d' Or in
Lyon.
Fortunately,
we
managed
to walk
more
than we
consumed!
Here are
a few
tips for
one of
our
favorites
'Chavez':
(Chavez
is a
mild,
silky,
and
creamy
goat
cheese).
-
Add
a
generous
dollop
to
tomato,
basil
bisque.
This
is a
delectable
change
from
sour
cream.
-
Add
goat
cheese
to
your
party
dip
for
a
tangy
twist.
-
'The
Tandem
Tasters'
also devours
pizza!
We
like
it
homemade
and
cheesy
with
thin
crust. Even
if
we
order
it
out,
we
add crumbles
of
goat
cheese
to
the
top
at
the
end and
broil it for
less
than
a
minute.
-
Quiche
Lorraine,
made
the
day
before,
is a
good
brunch
idea.
We
used
to
make
quiche
with
Swiss,
Gruyere
or
both.
Now
we
add
brie
or
goat
cheese
for
more
zest.
-
Add
goat
cheese
to
your
baked
or
loaded
potato,
along
with
some
chives
or
green
onions,
for
extra
pizzazz.
Our easy
recipe
for an
open
faced
(French
grilled
cheese)
sandwich:
Top a
slice of
French
bread
with a
generous
slice of
goat
cheese.
Add
cooked
bacon
slices
or
crumbles
and
place
under
broiler
until
golden
and
bubbling.
You can
substitute
a tomato
slice
for the
bacon.
Our team
likes
both.
Served
with a
green
salad
this is
a good
lunch or
Sunday
night
supper.
