Fondue is originally a Swiss meal, shared with friends and family, using a communal dish for the sauce that is kept heated over a small burner. Fondue means to melt and the diners enjoy the melted cheese sauce by dipping bits of food in the sauce. The earliest record of fondue is found in Homer's Iliad, where the recipe for the sauce is made from Pramnos wine, grated goat's cheese and white flour.
A fondue dinner is very easy to prepare, always impressive, and encourages great conversation during the meal. You can use cheese sauces, wine sauces, broths, and chocolate sauces. Mixing fruit, vegetables, meats, seafood with chunks of breads and cakes for dessert makes a complete meal that is perfect for leftovers or for starting from scratch.
