BAKED SWEET POTATO FRIES

2 Large Garnet Yams (skin on)
3 Tbsp. Canola Oil
¼ Tsp. Cumin
1/3 Tsp. Granulated Garlic
¼ Tsp. Smoked Paprika
¼ Cup Grated Parmesan
Salt
Pepper
Preheat oven to 450 degrees. Spray a baking sheet with oil and set aside.
Cut potatoes into ¼ inch wide by ¾ inch long strips. Place into a bowl. Add in: oil, smoked paprika, garlic and cumin.
Toss potatoes until well coated. Place in a single layer on the sprayed baking sheet (you may need two).
Bake for 8-10 minutes, until crispy. Remove from oven.
Salt & pepper to tatse. Finish with Parmesan. Serve immediately.
