California Mac and Cheese

CALIFORNIA MAC & CHEESE

On this episode of Blend Radio’s Eat Drink & Be Merry show, five-star chef and culinary instructor Ivan Flowers shares tips on cooking turkey and how to make his California Mac & Cheese recipe. 

 

 

 

Serves 4

 

1 Lb. Elbow Pasta
4 Oz. Unsalted Butter
4 Cups Whole Milk
1/3 Cup Flour
Salt
Pepper
2 Cups Shredded Cheddar Cheese
1 Cup Shredded Pepper Jack Cheese
1 Cup Mascarpone
½ Cup Diced Pickled Jalapenos
1 Large Avocado Diced

Preheat oven to 350 degrees. Spray an 8 X 8 casserole dish and set aside.

Cook elbow pasta in salted water for 7 minutes, drain then set aside.

In a saucepan over medium heat, melt the butter. Add in the flour and stir. Keep stirring until the flour becomes a blonde color. About 4 minutes.

Slowly add in the milk while still stirring. Cook until thick. Add in all the cheese and stir until melted.

Now stir in the elbow pasta and diced jalapeno. Salt and pepper to taste. Put into sprayed casserole dish and bake about 20 minutes until bubbling.

Serve topped with diced avocado.
