DATE BRAN MUFFINS

3 cups all-bran cereal
1 cup boiling water
2 1/2 cups flour
1 cup sugar
1/2 cup shortening
2 eggs
2 cup buttermilk
1 lb chopped
Medjool dates
2 1/2 tsp. baking soda
1/2 tsp. salt

Pour boiling water over 1 cup of all-bran cereal.
Sift flour with baking soda and salt.
Cream sugar with shortening; add the eggs, one at a time. Mix well after each one.
Add bran mixture and dry ingredients.
Add buttermilk and 2 cups dry All-Bran. Add the cut up dates. Mix well.
Fill muffin pan 3/4 full. Bake at 375 degrees for 20-25 minutes.
