ELOTE: CORN ON THE COB

6 Ears of Corn, shucked
¼ Cup Canola Oil
Salt
Pepper
¾ Cup Mayonnaise
½ Cup Parmesan
1 Tsp. Cumin
½ Tsp. Granulated Garlic
2 Limes
½ Cup Cilantro, chopped
Brush shucked corn with canola oil and then season with salt & pepper. Place on medium-high grill and cook for two minutes on each side.
While corn is grilling, in a large bowl combine the mayonnaise, cumin and garlic. Set aside.
Once corn is grilled, brush with mayonnaise mixture & sprinkle generously with Parmesan and cilantro. Serve with wedges of fresh lime.
Serves 6.
