PEANUT BUTTER BANANA MUFFINS

Cook Time: 25 minutes
1 cup buttermilk
1 small banana, mashed
½ cup creamy or chunky peanut butter
2 tablespoons margarine, melted
1 cup flour
¼ cup sugar
1 teaspoon baking powder
¼ teaspoon baking soda
1/8 teaspoon salt
Preheat oven to 350 degrees Fahrenheit. Coat muffin tins with non-stick cooking spray.
In a large bowl, mix together buttermilk, egg, mashed banana, peanut butter, and melted margarine, until blended and smooth.
In a separate bowl, mix together the flour, sugar, baking powder, baking soda, and salt.
Slowly add dry ingredients to peanut butter mixture. Stir thoroughly until combined.
Pour batter into muffin tins. Bake for approximately 25 minutes until golden brown or toothpick inserted in center of a muffin comes out clean.
