SAMMY’S 4-H BLUE RIBBON ZUCCHINI BREAD
This recipe is by Sami Rosalino who won a blue ribbon for it at the 4-H Fair. Sami is the daughter of Phil and Darlene Capshaw, who along with their family, own and run Red Horse Bed & Breakfast that offers a relaxed, family-style experience in an urban farm setting along the Rio Grande River in the South Valley of Albuquerque, New Mexico. 3 eggs

1 c. oil

3/4 c. white sugar

3/4 c. brown sugar

¾ t. nutmeg

1 t. salt

2 t. baking soda

¼ t. baking powder

3 c. flour

1 c. broken walnuts

1 – 8 oz. can crushed pineapple, drained

2 c. shredded zucchini

 

Beat eggs, mix in oil and sugars.
Add spices and pineapple.
Add flour and dry stuff then stir in zucchini and nuts.
Pour into 2 greased bread pans.

Bake at 350 for one hour.
