Ingredients –
1 package of wonton wrappers
4 T butter
2 cups (about 2 large) peeled & finely chopped tart apples
1 cup light brown sugar
2 T golden raisins
2 T dried cranberries
¼ cup pecan pieces
1 teaspoon ground cinnamon
¼ teaspoon freshly grated nutmeg
1 teaspoon freshly squeezed lemon juice
1/3 cup apple cider or juice
Canola oil
Cinnamon sugar or powdered sugar for dusting wontons
Prepare Apple Chutney –
Heat butter in a medium saucepan; add chopped apple, brown sugar, raisins, cranberries, pecans, spices, & juices. Cook over medium heat until apples are tender, dried fruits are softened, & cider has boiled away. Add a little more apple cider if necessary to keep the mixture from scorching. Adjust seasonings & sweetness to taste. Set aside & cool.
Make Wontons –
Place a spoonful of cooled chutney in the center of a wonton. Using a fingertip, moisten the edges with water and fold over to make triangles. Prepare all wontons.
Preheat a wok or deep, heavy-bottom pan to 350 degrees. Pour enough oil so it rises at least one inch up the side. The amount will vary depending on the size of the pan used. Add the stuffed wontons to the oil. Do not crowd the wontons. Cook the wontons until golden and remove them. Dust the wontons with cinnamon sugar or powdered sugar.
To Serve –
Plate some vanilla ice cream & top with wontons. Dust with more cinnamon sugar.
Wine Pairing –
A California oaked Chardonnay or LDV Winery’s 2022 Rhyolite Viognier.
