STEAM ROASTED BROCCOLI

Steam Roasted Broccoli

2- 1 Lb. Heads of Broccoli
2 Ice Cubes
3 Tbsp. Unsalted Butter
2 Tbsp. Olive Oil
1 Tsp. Granulated Garlic
4 Lemons
3 Roma Tomatoes
3 Tbsp. Balsamic Glaze
¼ Cup Grated Parmesan
Salt Pepper

Preheat oven to 400 degrees. Cut broccoli florets off of stem. Remove woody bottom from stems, peel and cut into thirds.
Put all broccoli on a piece of foil large enough to completely enclose around it. Top it with the ice cubes, juice of 2 lemons, the butter (cut into ½ inch cubes), granulated garlic and olive oil.
Close the foil tightly around the broccoli & make sure it is tightly sealed. Put the foil packet on a baking pan.
Cook around 30-45 minutes, checking after 30. You want the broccoli al dente.
Once cooked, place on platter and salt & pepper to taste. Top with diced Roma tomatoes, balsamic glaze & Parmesan. Serve with lemon wedges.
