Warm Red Pepper & Mozzarella Crostini

WARM RED PEPPER & MOZZARELLA CROSTINI
This recipe is from Ivan Flowers, a 5-Star Chef and Culinary Instructor, serves 6.

 

1 French Bread baguette, cut 6 slices on the bias

1 Large Red Pepper, roasted & diced

1 Tsp. Dry Italian Herbs

1/3 Grated Parmesan Cheese

1/3 Cup Shredded Mozzarella

1/3 Cup Mayo

Salt & Pepper to taste

 

Preheat oven to 400 degrees. Lightly toast baguette slices & set aside.

In a bowl combine: red pepper, mayo, Parmesan, mozzarella & herbs. Salt & pepper to taste.

Spray a sheet pan & put baguette slices on it and then spoon the mixture on top of the slices. Bake until the mix is bubbling & cheese is melted. About 5-8 minutes.

Serve warm. If you would like, serve with marinara sauce on the side for dipping.
