WILD WISTERIA’S CROISSANT FRENCH TOAST
This delicious breakfast dish is a favorite served at Wild Wisteria Bed & Breakfast in Chadds Ford, in the heart of Pennsylvania’s Brandywine Valley. 2 eggs
2 cups milk
1/4 cup sugar
1/2 tsp vanilla extract
1/2 tsp salt
1 cup all-purpose flour
2 tsp baking powder
4 large croissants (I use Costco)
Butter
Powdered sugar
Strawberries, raspberries, blueberries, blackberries
Whipped cream
Freeze croissants ahead of time.
In a large bowl, whisk together the milk, sugar, eggs, salt, and vanilla, until smooth.
Add flour and baking powder, stirring to combine until there are no lumps.
Heat a large skillet or griddle on medium high heat.
While griddle is heating, take croissants from freezer and slice horizontally in half.
Add butter to griddle.
With tongs, dip each croissant half in the batter allowing excess to drip back into bowl.
Arrange croissant halves in single layer on griddle.
Cook until golden brown on one side then flip to finish cooking.
For serving, place bottom half on plate and put the top half on bottom half.
Sprinkle powdered sugar on top and serve with berries and a dollop of whipped cream.
